>Easy Healthy Yummy Bean Soup Recipe

>Some days the hardest part of eating healthy is taking the time to cook.  That said, I had to share this with you – it turned out great and was so simple!  Combine the following:

2 cans of black beans, drained and rinsed
1 can of chicken stock
1 can of Rotel (combination of diced tomatoes and green chilis) 

All the cans are about the same size – 14 or 15 ounces – except the Rotel is a bit smaller at 10 oz.  If you don’t have Rotel in the pantry, a cup or so of your favorite salsa will work just as well.

I used a crockpot on High for about 4 hours, but a big pot on the stove would work too, in about half the time.  Also, I added some little smoky turkey sausages, just for extra protein and flavor.  It would be just as yummy without the meat.  Tasty go-withs could include a little dollop of sour cream, a chunk of corn bread or maybe a few corn tortilla chips, and fruit for dessert.
