Tasty Healthy Easy Chili Recipe

Gotta say, I love chili – but often, chili is not a very healthy option.  Here’s a recipe for some healthy and delicious chili that you can cook up quickly at home:

1 lb. or so grass-fed ground beef or ground bison, or ground chicken or turkey
1 cup or more salsa
2 Tbsp chili powder
2 tsp cumin
1 can black beans, drained
1 can Bush’s Grilling Beans (I like the Black Bean Fiesta variety) or Ranch Style beans, or other beans you like

Brown up the ground meat until there’s no pink left.  Drain it well if there’s any fat – it should be quite lean.  Add the salsa, chili powder and cumin, stir together, and let it simmer for about 10 minutes.  At this point you have a great taco meat filling, by the way! 

Stir in the two cans of beans, more if you prefer, and let simmer for another 10 – 15 minutes, and enjoy!  We like a little shredded cheese on top, and maybe a few tortilla chips. 

The salsa lets you sidestep the whole process of chopping and cooking vegetables.  You can use a hot salsa if you want the extra heat, or mild if you prefer.  Cooking at home lets you be completely in control of all ingredients, and usually costs less too!
