Day 19 – Pumpkin and Lentil Soup Recipe

This recipe sounds like a great starter for a memorable Thanksgiving dinner.  It sounds simple enough to make, and could be made the day before so it only needs to be heated through just before dinnertime. As if simple and convenient weren’t enough, this soup is also really healthy.  It has protein and fiber, and is light on calories.  Soup is filling, so you won’t be craving huge portions during the rest of the meal.

How about serving this soup for lunch a few hours before the main Thanksgiving meal?  It’s beautifully festive, especially garnished with a little cream or half-and-half, and would take the edge off that mid-afternoon need to mindlessly graze through the munchables.

[Disclaimer:  I have not yet made this, since I just came across the recipe myself, but it sounds too good not to try it!  I’ll be substituting some canned pumpkin rather than messing with cleaning and peeling a whole pumpkin, though.]
